NEUTRON SCATTERING INVESTIGATION ON TREHALOSE, MALTOSE AND SUCROSE/H2O MIXTURES

New Inelastic Neutron Scattering (INS) results obtained by using the TOSCA spectrometer (ISIS Facility, Rutherford Appleton Laboratory, UK) on disaccharides/H$_{2}$O mixtures are presented. The comparison among the spectra of trehalose, maltose and sucrose/H$_{2}$O mixtures, besides evidencing a different destructuring effectiveness on the H$_{2}$O hydrogen bond network, and hence different \textit{cryo}protectant properties, shows a higher ‟crystallinity” degree for the trehalose/H$_{2}$O system which accounts for its higher ‟rigidity”. This result justifies the better \textit{crypto}biotic action of trehalose in respect to maltose and sucrose.
